The Cookery in Dobbs Ferry will reopen today, November 21, at 4 p.m. for dinner. Chef David DiBari plans to celebrate the occasion with a new dessert he describes as "an 'Almond Joy' panna cotta and big banana cream puff with Nutella." It will be accompanied by a "a jar" of pumpkin cream pie.
Customers have come to expect creativity from DiBari's comfort-food kitchen. When the restaurant opened in March 2009, difficult economic times gripped the country. So The Cookery rewarded customers who ordered a rum and pineapple cocktail called the "Obama Stimulus Package" with a crisp new dollar bill as a coaster.
The restaurant has been closed since October 23 for renovation and repairs. "It's been a long month," DiBari commented.
The time of operation for The Cookery has been changed, he said and lunch is no longer being served. The new hours are:
• Tuesday through Thursday. 4 to 10 p.m.
• Friday and Saturday. 5 to 11 p.m.
• Sunday. 5 to 10 p.m.
• Monday. Closed
• Saturday and Sunday. 11:30 a.m. to 3:30 p.m.
DiBari had been the executive chef at Zuppa in Yonkers for five years before The Cookery opened its doors. A graduate of the Culinary Institute of America in Hyde Park, New York, he trained under Mario Batali at Babbo and with David Bouley at Danube. He also cooked at Windows on the World, Patroon and Five Points. Before joining Zuppa, he was the executive chef at Eastchester Fish Market.
